Seared chicken and mashed potatoes
with mushrooms and collard greens
5 oz boneless, skinless chicken thigh
Cook the mashed potatoes. You can use real potatoes or instant. Add butter and salt to taste.
Dry the chicken, salt and pepper and coat in flower.
Heat 2 tbsp. olive oil in pan and cook chicken 3-5 minutes each side until cooked all the way through. Remove from heat and store in warm place.
In the same pan, add the mushrooms and season with salt and pepper. Cook until soft.
Add drained collard greens (if from a can), or roughly chopped greens if fresh, a dollop of sour cream and ½ cup water. Salt and pepper to taste. Cook until liquid is drained off.
"The Legend of Tarzan"
This Tarzan story takes place after Tarzan has returned to England and has settled into his inherited position. He is married to Jane, but there is no Boy. Tarzan is summoned by the Elders to go check on their holdings in Africa that seem to be in trouble. Unknown to Tarzan is that a ruthless diamond miner has been promised access to the diamond mines in Africa by the King if he kills Tarzan for killing his son. It’s a trap!
This flick stars Alexander Skarsgård, Samuel L. Jackson, Margot Robbie, Djimon Hounsou, Christoph Waltz and John Hurt and is directed by David Yates. It is very well acted and directed. The special effects are fantastic, especially the 3D effects, if you have a 3D TV.
Although the story line is predictable formula stuff, it is still interesting enough to keep your attention all the way through. After all, it is a Tarzan story. It is really action packed….we give it a 2 thumbs up!
