Fontina Chicken with Zucchini
and Mashed Potatoes
Ingredients:
- 2 skinless, boneless chicken breasts
- Chopped sweet red peppers
- 2 oz Fontina cheese thinly sliced
Medium chop the potatoes and put into boiling salted water for 15-17 minutes. Strain water off and put back in pot. Add olive oil and sour cream and salt and pepper. Smash with fork.
Dry off the chicken and salt and pepper each side. Rub on Italian seasoning on both sides. Heat 1 tbsp olive oil in a medium sized pan on medium high. Cook the chicken 6 minutes one side. Then turn and cook for 4 minutes. Add cheese and peppers on top and loosely cover with tin foil for 2-3 minutes until cheese melted. Remove from pan and keep in warm place.
Add more olive oil to pan and heat on medium high and add zucchini and garlic and salt and pepper. Stir occasionally for 3 to 5 minutes, depending on how soft you like the zucchini.
Serve and enjoy!
A Dog's Purpose
Through the eyes of a dog reincarnated numerous times, we go searching for the purpose of his existence.
This flick stars Josh Gad, Dennis Quaid, Peggy Lipton, Bryce Gheisar, K.J. Apa, Juliet Rylance, Luke Kirby, Gabrielle Rose, Michael Bofshever, Britt Robertson, Logan Miller, Kirby Howell-Baptiste, Pooch Hall and John Ortiz.
It is well acted and was directed by Lasse Hallström.
This is a good family-friendly flick that deals with basic questions regarding our existence. We highly recommend it. Two thumbs up!
