Fontina Chicken with Zucchini
 and Mashed Potatoes

Ingredients:










Medium chop the potatoes and put into boiling salted water for 15-17 minutes. Strain water off and put back in pot. Add olive oil and sour cream and salt and pepper. Smash with fork.

Dry off the chicken and salt and pepper each side. Rub on Italian seasoning on both sides. Heat 1 tbsp olive oil in a medium sized pan on medium high. Cook the chicken 6 minutes one side. Then turn and cook for 4 minutes. Add cheese and peppers on top and loosely cover with tin foil for 2-3 minutes until cheese melted. Remove from pan and keep in warm place.

Add more olive oil to pan and heat on medium high and add zucchini and garlic and salt and pepper. Stir occasionally for 3 to 5 minutes, depending on how soft you like the zucchini.

Serve and enjoy!

 It is well acted and was directed by Lasse Hallström.

This is a good family-friendly flick that deals with basic questions regarding our existence. We highly recommend it. Two thumbs up!
