Catfish on Garlic Cheese Grits With Asparagus Smothered with Crabmeat Hollandaise
&
'Love Is All You Need'

Catfish on Garlic Cheese Grits Surrounded by Asparagus and Smothered with Crabmeat Hollandaise Sauce

Catfish filets
Emeril’s
3 tbsp Grits
2/3’s cup Chicken stock
Salt to taste
Can’t Believe It’s Butter Spray
Chopped garlic
1 Cheddar veggie slice per serving of grits
Asparagus
Hollandaise Sauce (one egg yolk, 1 tbsp. water, 1 tbsp lemon juice, Emeril’s, 4 glugs Tabasco and 4 glugs spray butter whisked)
1 can Starfish crabmeat drained

Combine grits, chicken stock, salt, garlic and cheddar veggie slices and cook in microwave for 2 minutes. Stir and cook for another 2 minutes. Stir again, cover and let sit.

Cut off non-tender portions of asparagus. Lightly sprinkle with olive oil. Salt. Cook in covered dish in microwave for 2-5 minutes until soft. Set aside covered.

In double boiler bowl, whisk egg yolk, 1 tbsp water, 1 tbsp lemon juice, 4 glugs of Tobasco and Emeril’s to taste. Add 4 glugs of spray butter and whisk again. Put just enough water in double boiler pan to cover bottom. Place bowl in pan. When you start to cook your catfish, turn the hollandaise on high and do not stir. Wait until there is a crust around the edges and then turn off. Do not stir until just before served. When ready, put the drained crabmeat in the sauce and stir.

Season both sides of the catfish filets with Emeril’s and flour. Place the filets in a heated pan with olive oil and cook until done. It should take anywhere from 4-5 minutes depending on the thickness of the filets. Don’t forget to turn the hollandaise on.

Place the grits in the center of the plate. Put the catfish on top. Surround the catfish with asparagus. Take the bowl from the double boiler and whisk the crabmeat and hollandaise sauce. Pour over catfish and asparagus.

Absolutely delicious! Quick and easy. Enjoy!

'Love Is All You Need'
After losing his wife suddenly, Pierce Brosnan’s character decides he will devote the rest of his life to his work, to the exclusion of family, friends and lovers.Fortunately, life has other plans for this unsuspecting workaholic. On his way to his son’s wedding, the bride’s mother, whose husband has left her for a younger woman, literally runs into Brosnan’s character, beginning a chain of mishaps and near disasters which culminate at the wedding.

The cast also stars Trine Dyrholm, Pierce Brosnan, Kim Bodnia, Paprika Steen, Sebastian Jessen, Christiane Schaumburg-Müller, and Bodil Jørgensen, all of whom did great jobs of acting. It was directed by Susanne Bier.

This movie has an unusual angle in that multiple languages are spoken throughout, giving it a rather sophisticated touch. It was done in such a fashion that you almost don’t even notice it. We give this romantic comedy of errors a 2 thumbs up!
