Meatballs with fresh squash and homemade tomato sauce


Bunch of parsley
Yellow onion
1 yellow squash
10 Oz ground beef
1 small baguette
1 tomato
2 cloves garlic
1 small baguette
Smoked paprika
Ground cinnamon
Ground coriander
Dried oregano 
Dried basil
2 tsp raisins
½ cup breadcrumbs
2 tbs tomato paste


Dice the onion and peel the garlic; mince one and save the other whole. Cut squash into eatable strips. Pick parsley off stems and finely chop half and save rest. Dice half the tomato and save the rest. Half the baguette length way.

Heat some olive oil and add the onion and half the minced garlic. Season with salt and pepper. Cook until soft. Add smoked paprika, ground cinnamon, ground coriander, dried oregano and dried basil to taste and stir until combined. Remove from pan. 

In same pan, heat some more olive oil and add the squash. Salt and pepper. Cook until soft and brown. Transfer to bowl and keep warm.

Combine the ground beef, raisins, chopped parsley and breadcrumbs with the sautéed onions and salt and pepper. Form meatballs (12-14). 

Heat more olive oil in the same pan and cook the meatballs. Drain the drippings but leave any browned bits. Add the tomato paste. Salt and pepper. Cook until combined. Add the diced tomato and meatballs. Salt and pepper. Cook until combined. 

While the meatballs cook, drizzle olive oil on the baguettes, salt and pepper and toast. While still hot rub the whole garlic and then the half tomato on the baguettes. Be sure to use all the garlic and to squeeze the juices out of the tomato. Throw the squeezed tomato half away. 

Serve the meatballs and sauce and squash in bowls. Garnish with remaining parsley. Serve with the bread on the side. Enjoy!

Carol’s Dad is a famous voice over in all the movies and commercials, typically using an opening line of: “In a world…” Carol is a mild mannered vocal coach. One day she is asked to fill in for her sick Dad. After doing a bang-up job, the producers decide she is a great alternative to her Dad. Before you know it, she and her Dad find themselves in competition. Let the games begin!

The movie stars Lake Bell, Demetri Martin, Rob Corddry, Michaela Watkins, Ken Marino, Fred Melamed, Alexandra Holden, Eva Longoria, Tig Notaro, Nick Offerman, and Geena Davis, all of whom do great jobs acting. Lake Bell directs and did a wonderful job.

This showbiz comedy was well done, although it seemed to drag in parts. All in all we both give it a two thumbs up.
